“Dumbo”? This place isn’t named after Disney’s flying elephant, but rather Down Under the Manhattan Bridge Overpass, one of Brooklyn’s famous trendy neighborhoods, which the tiny shop owned by Charles Ganem and Samuel Nataf is reminiscent of… In between its distressed/whitewashed walls, it houses the best burgers in SoPi and, better yet, the only “smash burgers” in Paris – made with patties smashed on the smoking hot griddle which produces an incredible Maillard reaction! The radically short menu gives you the choice between two burgers and a fried chicken sandwich, paired with double-fried French fries and seasonal pickles. The night we went, straight from the aluminum counter that opens out onto the street: an insane Classic Cheeseburger with a toasted bun filled with crispy, juicy beef that had been perfectly smashed, dripping with American cheese, pickles and an unbeatable ketchup-mustard combo. The other sandwich, soberly named “Cheeseburger” has iceberg lettuce and a “special sauce” – a sort of orange-colored mayonnaise. But FYI, they only make around 100 burgers a night – and they go fast, very fast! // G.V.
