Rather than having their mantra inked on their wrists (something they would certainly have regretted), mixologists Karoline Vlk and Harouna Saou tattooed “Life Is Beautiful” on the front of their cocktail bar instead. A wise decision! More so than their creations, which push the art of mixing things that on the face of it don’t really go together, and yet which shake about so well. This time round, we sipped on a masterful Under the Garden (Christian Drouin gin, oyster mushrooms, Pakruojis thyme liqueur, verjus, €14), served with a plant pot lid that allows you to adjust the oak smokiness to your taste. With that? A small creamy avocado dip with tortilla chips (€7), hummus with za’atar (€7) or a cheese tasting platter (€14). Good to know: all the cocktails can be bottled up to take away, and Harouna also regularly hosts mixology workshops. In the whiskey sour workshop, no less than 10 recipes get twisted.
