Winona is worth getting swept up in! Or simply settle in and languidly await the call of the night beneath a lacquered red ceiling hung with Romain Basil Petrot pendant lights, sunk into a plum banquette or perched at the dark marble bar… No expense has been spared on this boudoir-like bar, the love child of Benjamin Le Seigneur (Classique) and Adrien Vernet (Fugazi), with Yves Carlier behind the shaker and Cecilia Munguira (ex-Cortado Cantina) on small plates. Between them, the latter pair reel off Iberian and cocktail-bar classics, from bowls of salmorejo to dirty martinis. One wave we’re more than happy to ride! · Tami Taylor
Ordered: A Japanese-inspired Old Fashioned mixing sake, shochu and sesame (€14), back-to-back with a seriously seductive tuna ventresca tartine topped with peppers, anchovies and guindillas (€12).
