After a few years working as a sommelier at restaurants in Burgundy then at the Domaine Prieuré Roch, Aude Pothrat gathered up her bottles and opened this natural wine shop in Dijon. Once you step through the big arched doorway, a multitude of bottles awaits on the blonde wood shelves, organized by region and by color: En Remilly, a Saint-Aubain white from Dominique Derain (€64), Origin, a skin-contact Alsace wine from Jean-Marc Dreyer (€20), Nyctalopie, an Ardèche red blend from Daniel Sage (€33)… Plus a few beers and hard ciders from independent producers (including Angelcider from Vincent Marie at €18), which you can bring home or open up in house, seated at one of the tables near the entrance. And since Aude is the curious type, on market days, winemakers can always pop in and have her try a bottle! // Gwen Jacquère
