THE STORY: Lovers of old stones, Jo and Pierre Charlot have devoted 30 years of their lives to the restoration of beautiful ruins. After a Roman chapel dating from the 15th century and a Knights Templar Commandery from the 12th, they began work on an old hotel in Vieil Uzès in 2013. Two years of renovation were necessary to completely restructure this 15th century building, which now has 19 minimalist bedrooms and two terraces – one with a panoramic view, and the other with a rooftop pool. An ideal location for a relaxing getaway far from prying eyes. Double rooms starting at €125 a night.
