An Aegean-like terrace, sun-drenched tables, views of the Mediterranean… Perched on a rock across from the Port des Goudes, Hôtel Tuba’s restaurant Bikini expertly remixes Marseille, Ibiza-style – and vice versa. Overlooking Tuba, the hotel’s other, luminous restaurant, this mouthwatering rooftop joint brings in a (more or less) local crowd, who come admire the sunset while digging into a menu of balanced small plates. In the kitchen? The same chef as the downstairs spot, Sylvain Roucayrol (who used to work at Caché in Paris), who stitched together all of the following the night we went: vivifying oysters topped with fish roe and cornichons; a bowl of palourde clams awakened by vermouth blanc (incredible!); a refreshing orange salad with sliced mojama (salt-cured tuna); delicate amberjack crudo with bottarga; before creamy soft serve vanilla or pistachio ice cream for dessert. // Maud Zarella
FEELING THIRSTY? : Caméline Chantre has put together a selection of local wines, including a few low-intervention options (like Haru, a Provence rosé from Henri and Théophile Milan, €40 a bottle), along with Kina Karo vermouths (white, red or dry, €10 a glass), and a handful of cocktails (Negroni, Dirty Martini, Margarita… €16).
