In his cool retro bistro (unfinished walls, mosaic tile floors), Ardèche-native Lucas Bouissou sends out nothing but good vibes! A few years ago, he launched LYL, the most cutting-edge online music radio station in all of Lyon, which records live from Bistrot Senior every Thursday. At night, Lucas ties on his apron and sends out locavore small plates, prepared in conjunction with his dad Philippe (a former two-Michelin-star chef at Les Terrasses d’Uriage). The day we went, we got things started with: crisp carmine (a type of endive) electrified by an anchovy-orange vinaigrette; followed by an excellent hand-cut steak tartare (made with meat from Dugelay), well-seasoned with ginger, Burlat cherries (raw and pickled), amaranth and sunchoke chips, all topped with grated horseradish; and for dessert, addictive chocolate croquettas with a Madagascar vanilla ice cream center. // Adrien Bir
