A bouillon restaurant in Deauville, who woulda thunk? At Pierre du Cailar and Léopold Leverrier’s spot, they stew up traditional and inexpensive meals, where you can get a table without having to wait in an endless line like you would at their Parisian counterparts. In this old townhouse that’s been given a bistro makeover (tiled walls, paper tablecloths, retro posters), we dig into a menu overflowing with classics given the Normandy touch, like the mouthwatering Vallée d’Auge chicken – flambéed in Calvados and then stewed in cream and mushrooms. For us, seated under the big glass ceiling in the upstairs dining area: herring paired with steamed potatoes served cold with homemade aioli; frisée salad tickled by lardons, croutons and a perfectly runny oeuf parfait; steamed sea bream fillet dressed in sauce vierge and served with basmati rice; along with sausage with a full-bodied jus and a generous serving of homemade mashed potatoes. What about dessert? Grab a slice of warm tarte Tatin, which goes perfectly with a dollop of thick cream… One piece of advice: don’t come if you’re in a rush, the service can be a little slow. // Henriette Ma
