Owners of two of the most discreetly located restaurants in Paris, Lorenza Lenzi and Gianpaolo Polverino love secret hiding places! In a former printing house at the back of a cobblestoned alley, the duo who used to work in advertising and fashion continue pampering Caché, despite the much more recent addition of Amagat a few meters away. On the agenda, briny treats peppering Mediterranean dishes prepared by François Le Doyen, like the other night for dinner: Oléron oysters topped with cucumber and a dashi vinaigrette; chic gilthead sea bream sashimi with copious amounts of truffle oil for dipping; even more sea bream, butterflied and braised this time around, and generously covered in red chimichurri sauce, served with potatoes glazed in sake butter that left a lasting impression; before a basket of honey-drenched madeleines with whipped cream, or a gourmet chocolate mousse with rosemary ice cream and a brownie-style granola.
