After winding a few kilometers inland, brace yourself: the oh-so-stunning Falasca is the kind of place that’ll knock you for six. A little hidden paradise seemingly untouched by time (though not all that far from Calvi), this sublime indoor-outdoor cabin overlooks the glorious Balagne mountains shimmering in the golden-hour light. It’s here that cucinaru Jean-Baptiste Moretti (ex-Bras in Laguiole, Le Coquillage in Cancale and Noma in Copenhagen, no less) and his partner Mathilde Macloud (ex-Grand Hôtel de Cala Rossa in Lecci, and all warmth in the dining room) had the brilliant idea of building on his grandfather’s farmland. As dusk settles, the duo orchestrate a gem of a five-course menu a spassighjata, a steal at €68. Kudos to Biscottu, the corgi maître d’, adding yet more pedigree to an already spectacular tavern. · S.L.
Ate: Among the evening’s treasures, plump peas in pea pod broth, coddled by nepita-infused cream (a herb from the Corsican maquis); and wood-fired calamari tagliatelle marinated in Lunghignano black garlic and finished with a rich celery jus.
