Les Vans now has another excellent restaurant to brag about! Right near the magnificent restaurants Likoké and La Récré, Coline Zampa (ex-Rendez-Vous de la Marine in Paris) and Karim Geist (the manager of Le Comptoir du Canal in Paris) took over this sublime stone building with vaulted ceilings back in 2023, with a restaurant on the ground floor and a wine bar upstairs. What should you expect? Locally-sourced fare! Vegetables from La Ferme des Voisins in Gravières, meats from Rémi Clavel dry-aged in house, trout from the Villefort Lake… offered up as shared plates (a half rack of lamb or a half lamb saddle for two, for example) or as individual dishes for those who are ravenously hungry. The other day at lunch, we opted for: a perfectly prepared mullet carpaccio, with quartered plums and fresh shiso; Angus steak tartare and good homemade fries; a hearty caillette from Ginier, with jus de viande and some lovely creamed potatoes; a massive skate à la grenobloise; before an incredible chocolate mousse with olive oil and fleur de sel. // Gwen Jacquère
