Leaving a career in real estate behind him, Michel Carraud took to the high seas by developing an aquaculture farm on the Baie de Tamaris. He also set up, with help from Laetitia, an outdoor restaurant on the pontoon (a handful of tables and plastic chairs), where you can indulge in the briny delights he harvests. The other day for lunch, with 360° views of the bay, we had a dozen n°3 oysters that struck a lovely balance between natural sweetness and salinity, before a delicious bowl of mussels marinière, with freshly made, crispy and tender fries. There’s no dessert though, because the local council only allows seafood to be served on the pontoons. // A.A.
