Born into the qualified hands of Anne-Louis Brosseau (who also owns Paris-Boca), this gourmet gaucho spot adds another touch of color to the (already colorful) Trinité neighborhood with its XXS vermillion standing tables, pop art reproductions on the walls and long lines of customers with intermediate Spanish skills. In this lovely Argentine den that’s just big enough to place your order and get a whiff of the Maillard reactions taking place in the kitchen, there’s no carne asada, but there is shredded meat that ends up in burgers inspired by Diego Maradona’s homeland. We devoured the house’s take on choripán (the “Chori Pin-Pan”), aka a tasty slice of pork loin tucked in between two slices of thick and airy focaccia, coexisting wonderfully with intense criolla and chimichurri sauces, iceberg lettuce and pickled peppers. But the lamb, chipotle yogurt, stewed eggplant and pickled red onion version doesn’t look half bad either… And the golden fries made with Agria potatoes, though rather commonplace, are able to maintain their crispiness until you reach the nearest square (no small feat!). // Tsampa
