Street food duo Margarita Saldana and Peter Teys have traded in their food truck for an “imploded,” bricks-and-mortar version, resulting in a pulsating taco joint with graffiti-covered walls, a DIY salsa playlist for purists, an XXL kitchenette, and a line of hungry bellies waiting to dive in. The day we went, our fiesta included: corn tortillas piled high with spicy smoked chicken and a generous drizzle of chipotle sauce; quesabirrias oozing with braised meat and cheddar, served with a divine umami-rich broth for dipping; and the monthly special… a joyful chaos of fried fish, pickled onions and coleslaw – a messy, yet oh-so-delicious explosion of flavors!
