Judging by the big parking lot and the record turnout on this mundane Monday night, the D’Steinmuehl inn is operating at full throttle! It comes as no surprise to this regional institution (kelsch tablecloths, antique objects, locally made ceramics, guinguette-style lighting), where the Goettlé family delights guests with well-prepared Alsatian treats. Devoured the night we went (using our hands of course!): a classic flambéed tart, perfectly executed in both the classic version (topped with farm-fresh crème fraîche, onions and lardons) and the sweet version (topped with apples and cinnamon flambéed in Calvados), along with the flavor combo of sautéed potatoes, bibeleskäss (farm-fresh fromage blanc, garlic and fresh herbs) and smoked Black Forest ham, which was just as representative of the local terroir. Otherwise, spotted on the neighboring tables: a bucolic mountain of dandelion greens topped with a poached egg and lardons, pork shank cooked in beer, crispy potatoes with Munster and cumin… What about the desserts? There’s flambéed mirabelle plum tart, or snow eggs in a vanilla cream sauce. // Marcelle Claudepierre

FEELING THIRSTY? : Fine wines: a muscat from the Domaine Achille Thirion (€4.50 a glass), Lerchenberg, a natural riesling from the Becker family (€25 a bottle), Tradition, a 2020 pinot noir produced by Rémy Kieffer (€25)…
