Once based at the Marché de Gros wholesale market, this fiercely principled ice-cream maker causes shivers of excitement by using the finest local ingredients sourced within a 100-kilometer radius: lavender from his own garden, rhubarb from next door, beer brewed by friends… all transformed into brilliantly original flavors, free from artificial flavorings or additives.
