While a new coffee shop seems to spring up every morning, the green wave sweeping down Rue de la Bidassoa isn’t another matcha shop. It’s a mint-colored corner café named after Joy, the daughter of pastry chef Linda Lam, and her partner Varasy (aka Beck), owner of the restaurant where they first met (Baanbeck). Together, they bring their Southeast Asian heritage to a green sandstone counter and Modbar coffee machine, where freshly roasted Laotian coffee beans harvested on the Bolaven Plateau leave even the delicious pandan pastries (chiffon cake like a fruit sando, flaky laminated brioche) green with envy.
