Oh, what a beautiful morning! After training under baker supreme Sarah Lemke at De Superette and a stint manning the fort at Korst in Leuven, Linde Decoodt can now be found churning out sourdough in the burbs of Ghent, doing her part to keep morning hunger pangs at bay. Over in the Brugse Poort neighborhood, inside a beautifully revamped old ironworks (simple decor featuring a yellow tiled counter, mouse-grey walls, wooden shelves and small bistro tables), she tends to her leavened loaves: a signature whole wheat loaf with a deliciously charred crust, a boxy seeded loaf, or the spelt and sunflower seed bread… plus a few original viennoiseries, such as pumpkin and parsnip or pear Danish pastries, walnut and coffee puff pastry pinwheels or, even better still, savory couques cookies stuffed with kimchi from Boland Ferments and smoked blue cheese from Het Hinkelspel cheesemongers in Ghent – to be enjoyed on the go with coffee from the Antwerp-based roasters Rush Rush.
