Night owls Remy Savage (Bar Nouveau) and Guillaume Sanchez (Neso) fuel the arty crowd at this Lyon bar with Hopper-esque vibes (terrazzo floor, leather banquettes, central wood and aluminum island manned by a bartender all in white), not far from Les Pentes neighborhood. The promise is tremendously post-modern, complete with curious machines working flat out, as all the spirits are produced on site – and from a single ingredient! The menu has enough to keep you busy, featuring a dozen potions like the a sumptuous Mauresque (star anise, egg yolk, almond and vanilla, €9) or a h-h-hot Bloody Mary (tomato, Marmite alcohol, ponzu and wasabi, €13). And get your teeth into some sea-faring treats, like the lobster roll (€19) or the massive croque-monsieur with smoked eel and spinach (€19). Life imitating art! // Mado Réaousset
