Do you prefer the journey or the destination? Unplug couldn’t choose, and instead offers a supercharged experience that’s a cross between a trip back to the future and an immersion in faraway lands. A well-traveled foodie and startupper, Romain Caron called upon the architects over at Mur.Mur to build this fiery red and orange spaceship of a space, complete with ceiling lightboxes and porthole-like screens broadcasting tropical landscapes, where Victoire Spanneut (Bons_Bonnes) crafts the drink menu. The night we went, bartender Jimmy Bouteiller (ex-Liquorium) shook up a Coral cocktail with briny notes (toasted barley shochu, sake, umeshu, homemade shrub made with rice vinegar and green grapes, plus a saline seaweed solution – €15), followed by a bold Baobab (shiitake-infused bourbon, coffee liqueur, baobab syrup, mandarin and bitters – same price). Hungry? There are plates inspired by distant locales (obviously), like the mouthwatering crispy rice topped with salmon tartare and ponzu sauce (€12), or some cheeky cassava fries served with a spicy cilantro and jalapeño mayo for dipping (€8). // Frances Lo
