Friends Hugo Blanchet (Marrow) and Hubert Aucher (Les Houblonneurs) teamed up to open this spot selling entirely homemade sandwiches, waiting to be devoured in the Saint-Lazare neighborhood. There, you’ll find minimalist decor (a bar, two small counters, white tones everywhere you look) and an incredibly simple concept: two sandwiches (one vegetarian and one pork option), a brownie, and that’s all folks! The day we went for lunch we wolfed down the well-balanced meat option: a flour tortilla kneaded in house and wrapped around slow-roasted pork belly (meltingly tender, like a knife through butter) and crisp veggies (carrots, purple cabbage, lettuce), all shaken up by a lemon and parsley sauce. After that, it was impossible to escape the siren’s call of their signature brownie – so good it had us licking the paper. Hip, hip, Hubo! // Jane In
