Ikê may be missing, but Jimé is riding high! Perched atop Printemps Haussmann department store, Stéphane Abby’s (Asado Club, Mesa, Carboni’s) latest urban wave come crashing onto the rooftop in the form of a glass-walled, maritime-inspired kitchen, flanked by a south-facing terrace boasting postcard views of Paris. With interiors as bracing as a blast of sea spray, this sun-soaked spot invites you to dive chopsticks-first into ocean-driven cuisine laced with Japanese and Mexican accents. On chef Adrien Deliere’s menu, impeccably executed crowd-pleasers (lobster roll, tuna tartare, squid tempura) mix with more playful options, like mussels marinière with a mezcal kick. Our picks? Incredible whole fried baby crabs dusted with a tantalizing seasoning, best eaten with your hands (watch the dental work!); a more refined but equally craveable Banka trout fillet with miso beurre blanc and trout roe, snug alongside a heap of perfectly golden house fries; before finishing with a chocolate lava cake crowned with sesame whipped cream. FEELING THIRSTY? Some will be perfectly happy with an espresso, or even a Negroni or Tokyo Verde (€16-18) on the terrace. For the wine selection is limited, but well-judged: a sauvignon blanc from Caroline Bain (€16 a glass) or a Saint-Joseph from Domaine de Boisseyt (€79).
