Perched atop Printemps Haussmann department store, Stéphane Abby’s (Asado Club, Mesa, Carboni’s) latest urban wave come crashing onto the rooftop in the form of a glass-walled, maritime-inspired kitchen, flanked by a south-facing terrace boasting postcard views of Paris. With interiors as bracing as a blast of sea spray, this sun-soaked spot invites you to dive chopsticks-first into ocean-driven cuisine laced with Japanese and Mexican accents. On chef Adrien Deliere’s menu, impeccably executed crowd-pleasers (lobster roll, tuna tartare, squid tempura) mix with more playful options, like mussels marinière with a mezcal kick. Our picks? Incredible whole fried baby crabs dusted with a tantalizing seasoning, best eaten with your hands (watch the dental work!); a more refined but equally craveable Banka trout fillet with miso beurre blanc and trout roe, snug alongside a heap of perfectly golden house fries; before finishing with a chocolate lava cake crowned with sesame whipped cream. FEELING THIRSTY? Some will be perfectly happy with an espresso, or even a Negroni or Tokyo Verde (€16-18) on the terrace. For the wine selection is limited, but well-judged: a sauvignon blanc from Caroline Bain (€16 a glass) or a Saint-Joseph from Domaine de Boisseyt (€79).
