Far from the bling bling part of Champagne, Margot Laurent and Simon Heubi have built their little headquarters for the young regional new guard in town (pallets on the ceiling, hanging lightbulbs, a wooden tasting table). That’s where a group of rebels making unfiltered, low-intervention Champagnes get together – starting with the owner and her sister Charlotte, winemakers who sell their extra-dry Champagne under the label Oudiette x Filles (€38)!
