Evelyne and Pascal Clairet, the owners of the Domaine de la Tournelle, who were already stars of the Arbois natural wine scene, decided to turn their terrace into a cool outdoor bar every summer, located along the Cuisance River. Despite Pascal’s recent passing, you can still continue to get a beautiful taste of local life by pairing their wines with regional eats: escargot in parsley and garlic butter from the Ferme Bonvalot; very fresh goat cheese drizzled in olive oil; comforting trout rillettes from the Pisciculture des Grottes; or the undeniably good homemade pork / chicken liver / spinach terrine. And if you’re thirsty? Wines from the estate, of course, like this lively Chardonnay named Terre de Gryphées (€4.50 a glass or €27 a bottle), plus a few bottles by local friends, including a red Ratapoil that blends old, forgotten varietals (€29) or a Pinot-Chardonnay from Alice Bouvot (€29). // Rosa Poulsard
