THE STORY: A little ryokan à la française, that’s all that was missing from the nippophile collection of Bertrand Larcher, the founder of the Breizh Cafés (in Tokyo, Paris and Cancale) and from the Japanese-inspired Table Breizh in Cancale (2011 Fooding Guide special honor award). After having tasted the Nippo-Atlantic delights from chef Fumio Kudaka, you can now take full advantage of a purified bedroom, set-up above the restaurant, named after cider apple varieties. All blond wood and slate, their décor is minimalist, with just a few modern touches: galet-shaped floor pillows, round bedside tables… It’s pointless to add anymore when the real spectacle is below your windows: fabulous views of the Port de la Houle, the lighthouse and the Baie de Cancale, the Mont Saint Michel and the oyster parks. Double rooms starting at €118; the family suite (same basic tariff) can accommodate up to 6 people (€20 for every supplemental child).

INTERNET: Wifi (free).
BREAKFAST: Included, served in the dining room with a view of the port, with hot drinks, organic apple juice, artisanal Raphaël jams, Bordier yogurt and butters, bread and crepes.
