Spot the different between Butchers Coffee 1.0 and 2.0? Honestly, neither can we! Bean dealer Dave Haesen, who already spins coffee and vinyl at Andy Roasters, has simply swapped the old butcher’s shop in Zuid for a fresh patch in Borgerhout. Tiled storefront, pink lino floors, wooden banquettes, a circular central bar, retro lighting… In this new shared space, co-created with Hélène Geerts (a recent escapee from the tech world), chef Flor De Laat’s (ex-Nordica 31) calories-be-damned dishes embrace their anglophile influences with a cholesterol wink. Think brioche breakfast buns encasing an omelet patty, bacon and molten cheddar, served with a satisfyingly hefty gherkin; plump pancakes crowned with (slightly floppy) bacon and a memorably decadent banana ganache; or, for something more internationally inclined, a gloriously wobbly omelet alongside a thick wodge of sourdough bread from Keith Bakery (the in-house gluten department) and whipped butter.
