Benvenuto to the very serious embassy of pizza al taglio (“by the slice”), located in the heart of the papal city of Avignon! At Come a Roma, expats Valentina, Sandro and Pasquale pamper their dough: it’s matured for 48 hours, baked in big sheet pans until soft on the inside and crispy on the outside, and topped with carefully sourced ingredients. You can take it to go or devour it in house, like we did the day we went for lunch: an incredible slice topped with ragù genovese (beef and onions), Parmesan and black pepper; another slice featuring some libidinous guanciale, artichokes and fresh mint; before an incredible combo of ’nduja sausage, runny stracciatella cheese and lemon zest. // Raoul Taburin
