Echo as in Echo Park, one of Los Angeles’ most creative neighborhoods. At this cheeky cantina (tiled walls, light wood furniture, ceramics), Sonia Guerrero, the former sous-chef at Frenchie To Go, serves the best of feel-good California grub! The day we went for lunch, the City of Angels was the guest of honor: a mouthwatering vegetarian bánh mì sandwich filled with lentil and walnut pâté, sriracha aioli, carrots, cucumber, pickled daikon radish, fried onions, Fresco chilies and cilantro, all stuffed into a baguette; along with a hearty ranchero rice bowl – scrambled eggs, Mexican chorizo, avocado, pickles, cilantro and an extremely spicy fermented hot sauce; before a cholesterol-raising crème brûlée cookie. Noticed on the next table over, a classic avocado toast on sourdough with cherry tomatoes, pickled daikon radish, fermented tofu and a slightly spicy vegetable sauce, all topped with a handful of shiitake mushrooms. // Laura Dargent
