Friends who cook together, stay together! Inseparable as Chip and Dale, Institut Paul Bocuse alumni Gus – aka Augustine Isaac (ex-Hoxton in Amsterdam, front of house), and Gas – aka Gaspard Simon (ex-Trace in Paris), joined by Oscar Vacca (also ex-Trace) in the kitchen, have rolled into town with their (homemade!) buns and a tightly tuned concept. The setting? A minimalist takeaway spot dipped head-to-toe in the house white-and-purple palette, from tiled counter to packaging, where wizardry-level improvisation keeps things sparkling. On the menu? Sandwiches, sandwiches and more sandwiches! That lunchtime, we grabbed a bite at their pocket-sized corner outpost, two metro stops from the mothership, and headed straight for the tiny terrace: an ultra-soft bun cradling two panko-crusted pollock croquettes, slicked with strawberry-cherry ketchup and ravigote sauce, loaded with dill pickles, salad greens and a sharp squirt of lime. Alongside it, a Vietnamese-leaning salad of the day, bursting with cilantro, mint, cabbage, scallions, pickled grated carrots, peanuts and red onions. Still hungry? Check out the in-house desserts: caramelized apple and peach compote; lavender cream pudding spiked with sage and dried caper meringue; and the now-iconic salted dark chocolate cookie – chewy, chunky and studded with toasted almonds. · Ama Pola

FEELING THIRSTY? Three low-intervention wines are available by the glass (€4.50) or carafe (€15), including a mauzac from Poivre d’Âne, BBP craft beers like the NEIPA on tap (€5 for a half-pint) and a full lineup of Umà soft drinks – cola, lemonade, iced tea and ginger beer (€3.90 for 330 ml).
