There’s been a name change for this contemporary glass and metal structure located along the Chemin des Coteaux de Lomagne. Now it’s given way to an ethical café-restaurant, where chef Cyril Simon takes an eco-friendly approach and boasts a locavore pantry, which means you won’t find any seafood on the menu. The day we went, seated on the terrace across from the 18th-century church, we had some incredibly tender green and white asparagus grown by Francis Feutrier in Merles, sprinkled with finely ground breadcrumbs, plus a chive oil condiment, trout gravlax, mustard shoots and pickled red onion; delicious duck breast from the Mounet farm in Lavit, cooked to rosy perfection and served with an authentic jus de volaille, slow-roasted carrots, shiitakes, toasted sunflower seeds and oregano shoots; before some flavorful Murano strawberries from the Bedin family in Lachapelle, flavored with lemon balm, crème diplomate and granola. // Gérard Roubeix
