Don’t give a flying fish? You will, once you’ve gobbled up seafood near the banks of the Lys River, at Bram De Merlier, An-Sofie Van Herp and her brother Vincent’s place, who cut their jaws aboard their seaside food truck. Now located inside a tiny galley on the Koophandelsplein, the triplet serves fuss-free, sea-faring delights from the French southern coast and closer to home: Zeeland oyster gratin with miso and beurre blanc; Nobashi prawn tempura dipped in an herby mayo; dog cockles in a creamy white wine sauce; creamy scallops with a Parmesan panko gratin; and teriyaki salmon fillet seasoned with ginger and oyster sauce. Want more? There’s beetroot- and vodka-cured gravlax on raisin brioche, and swordfish tartare with sesame cream and a cured egg yolk.
