“Welcome to the South of France.” These welcoming words sure ring true as we enter into what appears to be a little slice of the Provence (red and white checkered tablecloths, a slapdash portrait of Bardot, a bar lined with French cheeses and charcuterie from down south). All that’s missing is the buzz of cicadas in the background at Willem Van Nieuwenhuyzen and Eva Tiétard’s place, whose dishes with a heavy southern accent have been calling the shots since 2007. Take our order, the night we went: pissaladière like you’d get in Nice; a porky platter from the Occitanie region; super fresh langoustines sautéed in grapefruit butter; fried oyster mushrooms to be dunked in truffle mayonnaise; roasted quail served with a light butter sauce, dates and pine nuts… or a fondant gardiane, the famous “daube” – a super tender bull’s cheek stew, braised in a red wine and black olive sauce. // Joséphine Espe
FEELING THIRSTY? Clean wines from southern friends, like Charmille, a viognier from the Domaine de Malavieille (€6.50 a glass), a chardonnay from the Domaine de Mouscaillo (€36 a bottle) or Le Manpôt, a red blend from Domaine Bassac (€34).
