Les Huîtres de Trousse-Chemise (Les Portes-en-Ré)

On the northern part of the island, right near the famous Petit Bois de Trousse-Chemise, Franck Moreau’s oyster farmer’s cabin is the best spot for a fresh snack with views of the salt marshes. After placing your order at the bar, grab a seat on a picnic bench with a glass of wine in hand, while waiting for them to call out your name over the megaphone when it’s ready! Served in wooden baskets: the casa’s n°3 oysters with a classic combo of buttered bread, lemon and shallot vinegar; raw palourde clams, whelks, big pink shrimp; or even Charentais grillons, the house’s only porky exception. // V.B.

FEELING THIRSTY? A glass of Sauvignon from the Pays d’Oc (€3 a glass) or an organic Charente Merlot from the Domaine Mery Melrose (€19 a bottle).

PRICE: Oysters €15 for a dozen.
