Ma che? It appears that Paris finally has its own proper al taglio pizza joint… Yes, but an Americano-disco version at that (aka “slices”), available in both triangular and square formats! Who is behind Rori, a dine-in & take-out spot with a windowed facade and glossy red tables? Angela Kong and Antoine Bernardin, who also own the very chic and tasty Bouche across the street, and who entrusted chef Florent Peineau to develop the pizza dough recipe here. Fresh out of the wood-fired oven and wolfed down just like in NYC the night we went: a tantalizing Pepperoni pizza made on focaccia and called the “Grandma,” featuring a tomato sauce base and topped with mozzarella, spicy salami and hot honey – a little too much of it for our tastes; a very fresh White pizza with fior di latte, served with fresh lemons for juicing over it; and a memorable Potato pizza, aka a bed of mozzarella and scamorza covered in thinly sliced potatoes, served with a dill crust dip – all of which was paired with beans in romesco sauce and slow-roasted garlic, if you can handle it… Still hungry for more? There’s vanilla soft serve with peach-verbena coulis and crunchy almonds to polish things off. // Maria Mariaux
