The cool 11th arrondissement just got even cooler with this “cave à sandwich” (we swear, we had nothing to do with it!) showing off its mix of unfinished and ‘60s orange walls, high tables opposite the open kitchen and round wooden tables. Who’s running the joint? Charlotte Billecoq, Lucien Prieur, Gabriel Dommengue and Victor Pouvreau (who worked respectively at Cheval d’Or, Le Café de la Nouvelle Mairie, Camille and We are On), serving pita sammies and stacked club sandwiches a go-go. Like the tantalizing butter chicken and roasted cauliflower combo with labneh and curry mayo; or the delicious carrot and mushroom “bourguignon” made even better with some added miso mayo and pickled onions. To go with that, grab a cheeky wasabi and furikake deviled egg, herring with potato salad prepared as a tartlet, divine smoked taramasalata drizzled in dill oil, an exciting endive tonnato with lemon and capers, some subtle white sausage glazed in an apple, honey and soy jus, or even, just for kicks, a tender poached pear served with miso caramel and crème d’Isigny over toast. // Tsampa
