They’re back! Ten years after shuttering Tcham Kae in Paris’s 15th arrondissement, and four years after closing Anju in Batignolles, Grégory Vachet and Yeo Hyun have opened a new spot in the Notre-Dame-de-Lorette neighborhood! Admire the old advertisements lining one of the unfinished walls at this special spot, as you wait for the house star to make its way out to your lacquered table: a seafood, meat or vegetarian bibimbap, made even better by the addition of organic seasonal vegetables. The day we went, after eggplant glazed in dashi sauce sprinkled with buckwheat chips, we dipped our chopsticks into an explosively flavorful rice bowl topped with carrots, celery, cucumber and black mushrooms plus karaage chicken… before falling for the charms of a rather sexy fresh fig mochi (or date mochi in the wintertime) with toasted seeds (sunflower, flax, buckwheat).
