It was here in Berchem, not far from the Deurne airport and its procession of planes, that Jony Overdijk, Nick Symons and Niels Van Heertem landed. With its childish moniker taken from the name Niels’ used to call his father, their organic bakery housed in a former elementary school brings a bit of greenery to the neighborhood thanks to its picnic tables scattered about the garden. In the workshop, only flour, water, salt and sourdough enter, the base for Bloemberen bread which cozies up next to the beautiful croissants. The three accomplices’ passion for pastries brings to life a cluster of creations, like crazy pistachio pinwheels, or rhubarb and cream puff pastries, which pair wonderfully with coffee provided by Rush Rush, the neighboring roaster. And why not leave with a bouquet of flowers freshly picked from the fields of Braam? // Kiko Zushi
