No mean feat to keep a cool head in the Marolles neighborhood! Hence the chilled-out idea from Manon Pinchart and Alexis Boisseau (both behind Pinpin), alongside Medhi Dubois (ex-Spek & Boonen): a neo-ice cream parlor scooped onto Place du Jeu de Balle. The only twist? The doilies of a grandma-style tea room have been swapped for neon-yellow At-Once stools, cinderblock tables, a giant mirror for striking a pose and a salvaged ceiling sourced from Rotor. Inside the stainless-steel tubs, the flavors keep things cool: waffle, sheep’s milk fior di latte (sourced from the Cabas cooperative), blood orange, clementine and Frederic Blondeel 70% chocolate. Not in the mood to lick? The counter also stacks cinnamon rolls, loaf cakes and praline pains au chocolat (made with Pinpin puff pastry), perfect for dunking into Parlor Coffee brews – unless you’re blowing hot and cold and fancy an affogato. · Carole Scarole
