Shrouded in mystery and with only a handful of local bars in on the secret, this ultra-hush-hush speakeasy, designed by Yen Pham (owner of Yi Chan), rolls out the red carpet for those in the know… or for those who dare to find their way in. If you want in on this six-seater bar (and not an extra seat to spare!), you’ll need the key to enter. That key? A discreet, yet classy (temporary) dragon tattoo, found in select partner bars, with cryptic clues dropped on Instagram. Enter the silence before – bam! A six-course liquid omakase menu kicks off (€55), plated like fine cuisine and masterfully executed by bartender Herbert Cahierre Brito. Think smoked cedar, elegant vanilla, sea-soaked kombu and almond milk as sweet as a kiss. Sophisticated spirits, razor-sharp ideas and attention to detail that flirts with perfection. The cherry on the shiso? A small but refined selection of Chinese-inspired appetizers (dim sum, Peking duck, etc. €7-28) also add to the occasion. Fine art to sip – and to bite into – at what may well be Brussels’ best-kept secret. · Bobbi Rossi
