Lastre Sans Apostrophe is the story of a romantic promise made by Yohan Lastre during the pâté en croûte world championships (yes, that’s really a thing!): if this former chef (the Ritz and the Tour d’Argent) managed to qualify his entry for the final round, he would open up a store in its honor. With the gold medal in hand, the talented butcher now works alongside Marion Sonier at this boutique where his award-winning pâté (pork, poultry, pistachios, for €54/kg) shares the podium with other creations, including a delightful chicken, lemon and tarragon pâté en croûte (€57/kg). Other, more meal-like options available at their shop include: leeks in vinaigrette with intense umami notes (€6.95/serving), an incredible croque monsieur (€7.50), the house’s famous jarred polpette (€25) and an old-fashioned flan (€7.50 for a 2-3 person slice). // J.P.
