“Eat bread and life will be good”: that was the friendly carb-loaded advice from Amelia Bell when she crowdfunded the opening of her adorable shop (zellige tiles on the wall, a blonde wood bar, exposed lightbulbs). After honing her skills at Sain and Mamiche, now she’s running this bakery with golden lettering, where she works with heirloom flours, natural levains and long fermentation times. Her offerings? Cheeky Danish bread with plenty of seeds, pillowy white bread, or even an impressive baguette – which you can order as a sandwich at lunchtime, like the version filled with tofu and peanuts. In addition to all that, they are some exquisite cinnamon and cardamom rolls, pretty viennoiseries, devilishly good tarts (a special mention for the chocolate-buckwheat one), cakes, cream puffs and cookies… And here, there’s a zero-waste approach: the croissant trimmings wind up in some beautiful cakes! // Jean Pascal
