All it took was two brothers – ceramic architect Charlie Delval and pastry chef Sacha Delval (ex-Marc Ducobu in Waterloo and Callier in Uccle) – to pull Sacha fresh out the oven back in 2021, with its Boho light fittings and light blue and crème (pâtissière) checkered tiles. That Saturday, Aurélie greeted a good half of her customers by name, selling them loaves of sourdough bread made from natural, unprocessed flours, like spelt baguettes and wholemeal loaves, all lined up behind array of pastries and pretty little cakes: golden brioches, crispy chocolate croissants, crunchy cannelés, caramelized cinnamon rolls and vanilla flan, Paris-Brest pastries for one… The locals of Lasne are very lucky people! // Timotea Persil
