After their successful Fermentation Général venture, Alexis Bourre and Valentin Orgeas have unveiled a piping hot bread and wine shop on Rue Sainte-Marthe. Behind the humble azure blue storefront, Secousse draws in (carefully-sourced) wheat purists, lovers of products made without added sugars and anyone hungry for well-ground flours – by the neo-farmer Cyrille Renault specifically. Take the country bread with its thick crust and chewy interior, the rustic rosemary focaccia with a generous brushing of olive oil, or the airy raisin scones. And given the opening hours, nobody would look at you weird if you took home a bottle of natural wine as well, like the vibrant cabernet franc macerated by the Alsatian winemakers over at Pépins. // Line Dema
