In his Montmartre refuge, Shinya Inagaki (the magician behind Fermentation Génerale, Boulangerie du Nil and Le Grenier à Pain!) bakes in the purest peasant tradition, producing beautiful natural sourdough breads, Italian-Japanese foccacia and his now legendary scones. In the small shop (a charcoal-colored façade and bare walls), he receives customers little by little, surrounded by the big oven and sacks of flour, while passersby and well-informed tourists drool over the window display. Fresh from the oven: Austrian wheat bread, small spelt wheat rolls, a rye and wheat loaf… All kneaded by magic hands. // S.S.
