Cool girl collects bubbly beers! Blond, amber, white, brown and red ones… Sybille Alliet has all the varieties at her micro-brewery Vestibule, hidden away in a string of warehouses. The former oenologist who decided to take on hops in the cellars of Bordeaux has composed an impressive range of six different styles of beer, which include a spicy red ale that combines buckwheat and rye. Come and get them in-house twice a week, when she rolls out her kiosk on wheels made from wooden pallets, or shows up at local shops (Les Vins d’Oleg and Le Grain de Sel in Guérande). // T.J.
