Cannon fire in Saint-Jean-de-Luz! Near the covered market, Sébastien Juanicotena has revamped his wine shop Notre Sélection so he could also welcome in a crowd, wine bar style. Outfitted in various shades of pale wood, the newly christened Canon boasts a collection of over 600 natural wines, half of which are sourced from Spanish winemakers. Expect countless treasures scattered across the shelves: Pardas Sus Crofa, a Catalan red by Celler Pardas (€14 a bottle), Izaki, a Basque petit courbu produced in collaboration by Alfredo Egia and Imanol Garay (€25), a sparkling Aligoté from Le Clos du Moulin aux Moines (€25)… All of which can be taken to go or sipped in house in exchange for a €10 corkage fee (€20 for bottles over €30), alongside a few snacks – Basque pâté (€8.50), sardine rillettes (€6.50), ham and cow’s cheese toasties (€8)… Want another insider tip?
