After a career detour as a sales rep, he now spends his time hunting down bottles that keep chemicals firmly at bay, neatly lining his metal racks with finds like Pinot Gris Aussi, a pure pinot gris from the Coteaux-d’Ancenis by Bernard and Benoît Landron (€12.90 a bottle); Sanguine, a skin-contact grolleau gris and cabernet franc from Les Justices (€14); Les Collines de Vaux, a Bourgogne-Côtes-d’Auxerre red from Domaine d’Édouard (€21.90); or a trousseau from Domaine de la Renardière in the Jura (€33.90). Pierre is more than happy to pour a few glasses (€3 each) or pop a bottle (with a €7 corkage fee) at the lone table out front – and, thankfully, he’s also opened a second location in Nantes to keep thirsts quenched the rest of the year. · Scotty Lard
