Marc Gérise gave up his transportation companies in order to breathe life back into Ballon 2 Rouge. This wine shop feels like a library with its big wooden shelves, filled with over 700 organic-natural labels and 400 spirits! What will you find there? Bottles that show off the French terroir (Château Le Puy in Bordeaux, François Chidaine and Touraine, Sylvain Pataille in Burgundy), wines made by friends from the area (Milan, Soulier, Renaud), and a few low-intervention options (Pfifferling, Gramenon, de Moor). Eyeballed longingly the other day: a Chablis produced by Thomas Pico (€30), Fleur de Savagnin, an Arbois from the Domaine de la Tournelle (€39) and Fidèle, a Champagne from Vouette & Sorbée (€52). Along with a Flavis Single Cask whisky from the Domaine des Hautes Glaces (€150 for 700 ml), and even rabbit terrine or duck confit from Maison Argaud. // Gwen Jacquère
The bullet-proof bottle: À la Vie, an Alsatian blend of Sylvaner and Pinot blanc from Patrick Meyer (€13).
