THE STORY: Facing the mountain, a two-sided inn. On the front, traditional Basque, on the flip side, contemporary purity. Cédric Béchade, who fell in love with this region, interjects the right amount of modernity into the bedrooms and the plates to refresh the spirit of Navarre. Rooms from €129 to €385.

BREAKFAST: €18 with homemade compotes, Saint-Pée brioches, Basque cakes, sheep’s milk yogurt, Bentjeman & Barton teas, smoothies, taloas (corn flour crepes) ; “grand” breakfast at €28 with ham, sheep cheese, trout, poached eggs, fruit salad.
LITTLE LUXURY: Homemade lemonade as a welcome with exotics flavors (cinnamon-orange, apricot-rosemary…).
