Star chef Emmanuel Renault, who has deep roots in Megève, is now attacking the other side of the massif: Chamonix! His basecamp? A chalet at the foot of the Le Brévent mountain, with a wood-clad dining room and breathtaking views. The cherry on top of his Mont-Blanc is young chef Xavier Aubel (ex-Flocons de Sel), who sent out a first-rate lunch last January: starting with daintily cubed cardoon – as creamy as a risotto and wonderfully peppery, with dried egg and shaved Beaufort; then Arctic char from the Cévennes, slow-cooked and oh-so tender, with its skin rolled up like a cigarillo, lounging atop a beurre blanc sauce with roasted salsify, a sweet butternut squash purée and a few dots of lemon jelly, plus a handful of smoked new potatoes on the side; and finally, a perfectly executed bistro-style apple tart. // Damien Sorin   

FEELING THIRSTY? Brought over from the Flocons de Sel wine cellar, you’ll find luxury bottles, including Arces, a Jura Chardonnay produced by Jean-François Ganevat (€140 a bottle), or the Burgundy Gamay from Prieuré Roch (€85), along with Savoie classics served by the glass – a Mondeuse from Trosset or an Apremont from Blard (€10).
